Kamado Joe KJ23R Egg Shaped Ceramic Japanese Style Kamado Cooker with Side Shelves, Cart and Free Grill Cover in Red. Kamado is the Japanese word for "stove" or "cooking range". Kamado cooking has its origins in clay vessels found in China, dating back over 3000 years. Over time the clay pot evolved into ceramic, dampers and draft doors were added for heat control and charcoal replaced wood as fuel.
Inside the ceramic egg, a ceramic bowl holds the charcoal. A draft opening in the lower side of the grill provides air to the charcoal and a controllable vent in the dome lid allows air to leave the cooker. Adjusting these two vents controls the internal temperature in the cooker. A hole in the lid allows the thermometer to be inserted for monitoring the temperature. Lump charcoal is preferred over briquettes as it contains less contaminents and can be manufactured in an environmentally sustainable manner using the technique of coppicing.*
All ceramic grills are not created equal. Kamado Joe cookers use the best refractory material for the cookers, fire boxes and fire rings. Each high fire ceramic piece has a minimum one inch thickness. You can actually smoke a brisket for 24 hours without adding charcoal every few hours. The grill also self cleans, after cooking you just open the vents and allow the grill to reach a temperature of 500 degrees for 15 minutes. 304 Stainless steel and thick finished bamboo, finish off the cooker with quality details.
Starting a fire with the Kamado Joe Grill is easy. You fill the firebox with charcoal, ignite it with 3-4 tightly crumpled sheets of newspaper or other standard paraffin or electric firestarter. Keep the lid open and wait 15 minutes, then close it, open the draft door and top vent. When you reach the desired temperature, adjust the airflow and start cooking.
The Kamado Joe grill is delivered fully assembled. Included are the bamboo side shelves, the stand, thermometer and we have added a free grill cover to every order. This grill is meant to last a lifetime, and the Kamado Joe stands behind it with their twenty year warranty on all the ceramic parts of the egg.
*Coppicing is a traditional method of woodland management which young tree stems are repeatedly cut down to near ground level. In subsequent growth years, many newshoots will emerge, and, after a number of years the coppiced tree, or stool is ready to be harvested, and the cycle begins again. (Wikipedia)
